Tofu With Green Eggplant



Ingredients:

Tofu
5 Green Egg plants
1tsp ginger garlic paste
1 Onion
2 tb spoons peanut powder
1 tb spoon coriander powder
1 tea spoon garam masala
1 cup coconut milk
1 tb spoon chili powder
1 tomato
cilantro

Preparation:
Cut tofu in to small cubes and saute them with little oil until light brown, add enough salt in to that while tossing and keep aside.
In a pan take 2 tbs of oil and add chopped onions and saute them for 5 minutes
Add some salt and turmeric in onions and add ginger garlic paste and cook for 1 minute
Cut egg plants in to medium size pieces and add it to onions
after 5 minutes add chopped tomato and cook for 5 more minutes with lid on
Add chili powder, peanut powder, coriander powder and cook for 5 minutes and add 1 cup of water into that mixture and cook for 5 more minutes. Add enough salt
Now add coconut milk and cook for 5 minutes and add garam masala
and very end add roasted tofu and cook for 5 more minutes and add chopped cilantro and turn off the stove.

This curry is yummy with white rice.

Note: Use your spices as required.
