Corn Chat (Salad Indian style)

                                               Corn Chat


                                 


Ingredients:

Corn kernels (cooked) - 3 cups
Bell peppers (green/orange/ red) (chopped) - 1 cup
Onion medium (as per your taste) - 1 (chopped)
Tomatoes (chopped) - 1
Carrot (grated) - 1 cup
Lime or Lemon juice -1 to 2 Tbsp ( as per taste)
Cilantro (chopped) - 1 cup
Boondi / Sev - 1 cup

Spice powder Ingredients:

Chilli powder - 1 tsp
Chat Masala - 1 Tbsp
Amchur Powder (dry mango) - 1 tsp
Salt - 1 tsp
Jeera Powder(cumin) - 1 Tsp
Coriander(Dhania) powder - 1 Tsp
black pepper powder - 1/2 Tsp

Procedure: 
Mix all the spice powders in a bowl, please adjust as per your taste.

You can use frozen corn kernels and cook in microwave for about 10 mins adding some salt.
Mix all the ingredients except boondi/sev
Add spice powder and mix well and also Boondi mixture before you serve.

Perfect lite appetizer for any occasion or just evening snack with tea.

Alasanda garelu (black eyed peas snack)

    Alasanda (balck eye peas) garelu are very famous snack in rayalaseema region. Alasandalu also known as bobbarlu in other areas. They usually make these on some special occasions one of them is kanuma day which comes after sankranthi festival. Alasanda garelu and chicken curry combination is very delicious. You will find these on road side (street food) on almost most of the places of rayalaseema mostly on evening times. Usually there they use brown color peas (alasandalu) but they are good with white ones as well. This year my mom made these for kanuma special and they are very delicious, you can just eat as it is without any side.


Ingredients:

Black eye peas(bobbarlu) - 1 pound
red onion - 1 chopped
mint leaves - chopped 1 cup
cilantro - chopped (1/2 cup)
green chilis (thai chili peppers) - 5
ginger root - 1 inch slice (peeled)
cloves - 4
cinnamon - small stick
oil - required for deep fry
salt - required

Procedure:
Soak black eyed peas overnight in water and keep aside
grind coarsely chili peppers, ginger, cinnamon and cloves together and keep the mixture aside
Drain the water from black eyed peas and grind coarsely by just adding some salt
add chopped onions, pepper and ginger mixture, mint and cilantro to the black eyed peas mixture.

In a pan add oil for deep frying and let it heat
take big lemon sized mixture and flatten it with fingers circular shaped and made a little whole in the center and slowly lift them with your hand drop it carefully in to the hot oil and let it fry both sides until it turn in to brown color. It will be crispy outside and little soft from inside.

Note: for making flatten rounds you can use a banana leaf or a zip lock bag and each time clean the base with water so that it will come out easily in to your hand and you can easily drop it in oil.

Serve them hot with tomato or ginger chutney or chicken or goat curry.

South Indian style fish fry


Ingredients:

1 pound Cat fish or Tilapia or your choice(with bone or fillets)
1 tbsp lime juice
1 tsp salt(adjust as required)
1/2 tsp black pepper powder
1/2 tsp red chilli powder
1 tsp ginger garlic paste
1 tbsp chopped cilantro
1 tsp coriander powder
1/2 tsp garam masala powder
1 green chilli finely chopped

Wash the fish pieces with salt and turmeric powder and water
Add all the ingredients in a bowl and add fish pieces to it
Marinate for 30 mins and in a wide pan add 2 tbsp of oil and cook the fish both sides until done. It doesn't take more than 15 mins. Cook one side properly and then turn other side. Never overcook the fish.


Black bean Mango mexican salad


Ingredients:
1 cup black beans(soaked and cooked with salt and water or canned beans)
1 cup semi ripe mango cut in to small pieces
1 cup raw corn kernels
1 cup chopped red, yellow and green bell peppers
1 avocado ripe cut in to small pieces
1 cup cilantro chopped
1/2 cup red onions chopped
1/2 cup tomatoes chopped
optional: sliced grapes
2 tbsp lime juice
1 tsp black pepper powder
1 tsp salt (adjust as required)
optional: 1tbsp olive oil


Add all the ingredients ingredients in a bowl except avocados and keep in refrigerator for about 2 hours and add avocados before you serve otherwise they turn black.

You can eat this just as salad or serve with any kind of corn chips. No doubt this will turn everyones favorite either in parties or home.

Mango Fish pulusu

Ingredients:

Cat Fish or other fish of your kind with bone - 2 lbs

Raw Mango - 1 medium sized

Tamarind juice - 3 tbs (adjust as per your taste)

dry red chilli powder - 2 tsp (adjust as per ur spice level)

salt - 2 tbs (adjust as per your taste)

onion - 1 medium sized

Tomatoes - 2

green chilis - 3

curry leaves - 1 strand (optional)

cilantro - chopped 2 tbs

fenugreek seeds - 1tsp

cumin seeds - 1tsp

ginger garlic paste - 1tbs

coriander seeds - 1tbs

Oil - 2 tbs



Procedure:

Wash your fish with salt and turmeric powder to get rid of little raw smell of the fish.



In a wide large pan add oil and when it gets hot add half tsp of fenugreek seeds and curry leaves

add chopped onion and slitted green chillies and add little salt and turmeric powder.



When onions becomes translucent add ginger garlic paste to it and let it cook for 10 secs

add pealed and chopped raw mango pieces( cut into medium size cubes) and tomatoes and let it cook until gets soft.



Add salt and chili powder and then add tamarind juice and also add water and let it boil for few minutes, the consistency should not be too watery and at the same time fish has to drown in the liquid.

Add fish pieces close the lid and let it cook for 5 to 7 mins.



Mean while in an other pan dry roast coriander seeds, cumin seeds and half tea spoon of fenugreek seeds and make fine powder of all 3



Add the powder to the fish curry mixture and let it cook for 5 more minutes and at last add chopped cilantro.



Note: Adjust salt , spice and tamarind as per your taste, some people may like it sour and spicy and some may not.



I am pretty sure every one love this. Enjoy with white rice.

Easy Tomato Rice


Ingredients:

Cooked White Rice: 2 cups
Tomatoes - 2 or 3
Dry red chillis - 1
Cilantro- 1 tb sp chopped
Red chilli powder - 1/2 tsp
Salt  to taste
Oil - 1 tb sp
Turmeric powder - pinch
Mustard seeds - 1/2 tsp
Cumin Seeds - 1/2 tsp
Chana dal - 1 tsp

Preperation:

In wok, add oil and when oil heat little bit add mustard seeds, cumin seeds, chana dal, whole red chilli slit in to two pieces and when chana dal become light brown then add sliced tomatoes and close the lid and cook until they become soft. Add turmeric powder , red chilli powder and salt and add cilantro at very end and add cooked rice and mix well.

Very tasty rice in few minutes is ready for lunch box.
